Princess Diana's Carrot Soup

I give up.
This is sooooo good. It was in our paper ages ago (like maybe 20 years), when she was getting anorexic, and her chef made this up to tempt her to eat.

2 pounds carrots, peeled and sliced fairly thin
1 small onion, chopped
2-3 cups mild chicken broth
1 to 2 cups half & half
1 tablespoon butter

Salt, white pepper and mace to sprinkle on top (to taste on all these)

Cook carrots just until tender (10-15 min). In last 5 minutes, add onion. Drain. Put in blender, and puree a minute or so until smooth. Put in pot. Add as much chicken broth as you want, then butter. Heat on low flame. Add cream (as above, what you're comfortable with), salt, white pepper to taste. When in bowls, sprinkle a little mace on top (really optional, but gives a nice flavor too).

this soup looks so good and rich. i'm not familiar with using mace tho. i'm eating a bowl of lentil soup right now that i made yesturday. lentils and rice cooked up in chicken broth. added a carrot and a stalk of celery and onion to it, salt and peppper and a dash of cayenne. it's thicker tonight but still good.
