potato recipes for Wimpy

Thought we might be able to help Wimpy out by posting our favorite potato recipes. Got to use up all those potatoes!!

Katy's Mashed Potatoes
Peel, cook and drain 5 lb potatoes
Mash until smooth.
Add 2 to 3 ounces cream cheese
2 tablespoons butter
1 cup sour cream
salt and pepper
Beat until light and fluffy.
Put in greased serving dish and dot with butter.
Bake in 350 degree oven for 30 minutes.

You can make this dish up ahead. After beating, cool, cover, and refrigerate for up to 2 weeks. Then follow the rest of the recipe when you are ready to make the meal.

I have made this dish several times and it is delicious.

It truly is a different mash pot recipe

But Cas. ya know I can't eat the sour cream. Us fat guys have to watch our weight very closely. ha. and cream cheese. ha.
Tell you what someday when I am cooking for skinny company I will do this recipe. In the mean time I would like to share one with you and others that I came up with. (an original ) I love originals) Got to go out and do a chore will post it above a little later.
However I will part with my baked potato favorite way right now.

Wash potato : leave skin on: place in 375 oven for about 20 minutes (depending on how large it is) take out and wrap in tin foil and finish baking. ( some say that when you wrap a pot in tinfoil you are doing a steamed pot. they say to have a real baked one you bake it in the bare)

Also I don like them quite as well this way but it is quick.
Place in a plastic baking bag (microwavable) Note; ( not all plastic wraps and bags are appropiate, even if the box says so. For when they contact the food they may stick or melt) microwave for 2 or 3 minutes then put in tin foil and the oven.
Off course you can finish in microwave but do so slowly or pot will be spongy and poor quality.

the oven is best but to save time you can change back and forth. ie get started in micr. and then put in conv oven.

Hey, Wimpy.

Sorry, I didn't know you couldn't eat sour cream. But your skinny friends will like it. Can't you buy a non-fat sour cream these days?

Am going to try your way to bake potatoes. Mine usually get mushy and I never knew why. Thanks for your reply!

It could be the type of pot yr baking. That is why the russet burbank white is so popular.also it is not so good to buy pots from the grocery store when they have them sitting right out in the light. That is why some of them trun a little greenish and get bitter. If you buy from the shelf try and get the ones in the dark brown bags. Better to get them from a grower and store your own in dark cool place. I was half way kidding about the cream, but I never have been a cream fan . It aso seems like it would make the mash pots heavy and gluey ? O yes I will try it someday and thks for the recipe. (just talking )

I forgot the main part of baked pot.

The skin: The reason for baking bare is because it makes for a tougher skin. I like to eat the middle out (the white part) then put some coleslaw in the skin and eat it like a sandwich. Of course we all know the skin has many and prob. most of the good stuf in it. (vitamins and such ) Love the skin.

A cole slaw sandwich? I had a great uncle who made applesauce sandwiches. I guess this wouldn't be too different. :lol: If I ever get some good potato skins, I might try it. I like cole slaw and I like potatoes, just never had one inside the other before.

I don't know any growers to buy potatoes from so I have to get them from the grocery. Don't have a lot of choice. One place has them in mesh bags. those don't last very long, but they are cheaper (when money is tight). Another store uses brown paper bags, but the front part is mesh so you can see what is inside. Usually I just sniff the potatoes to see if there is a rotten one in the bag. If so, I put the bag back and pick another one. I store them in the dark, and the apple seems to help.

If you like the skins, I think you can buy just the skins, not sure about that. Ready to eat I think. Probly full of calories and fat.

Well, wimpy, it appears that you and I are the only ones interested in potatoes right now. But that's OK. Do you like to fix scalloped potatoes and French fries? I have a recipe for fries somewhere but will have to post it tomorrow for you. Thanks for the info! Have a great evening.

O yes I have my vices : french fries

I love um but really don eat too many not a fraction of what I would like to. LOve to see how you do them. My favorite so far is to bake potatoes half done, (or boil them) then french fry them. And I love scalloped pots. My wife usually does the scallops.

don mean to hog the board ones. I really like other things than potaoes. ha. I like reading recipes and experimenting. I sometimes read 3 or 4 recipes on something and shift them around into one.

Shay : by the way; anyone know the secret ingrediant in K. fried Chicken ?

Found that recipe I was telling you about, but it looks like I goofed. :o It's not French fries, but more like hash browns. Here it is.

Better Than Fireside Potatoes

Boil 1 pound red potatoes, skin on, until soft.
Coarsely chop.
Add 1 small chopped onion and 1 bunch scallions, finely chopped.
Place a small amount of water in a nonstick skillet.
Add the potatoes and onions.
Cook, turning frequently with spatula, until potatoes brown slightly. Takes about 15 minutes, and serves 2 to 4.

See what you can do with this one, Wimpy.

If I remember correctly, Fireside is a restaurant that is famous for these potatoes. At least, I think so. This is a copycat recipe.

And you might try www.cdkitchen.com to see if they have the copycat recipe for K Fried chicken.

Don't worry about hogging the board. When someone else has something to contribute to our chat, they will. :D

Believe it or not that is how I like to do my potatoes. (fry them with onions, /greenpeppers/ garlic/ after they have been boiled or baked. When you get older frying the raw potato into hash browns gets to your stomach However You do it in water ? instead of oil. ? I sure haven't tried that . and they still brown ? hmm becha I try that tomorrow. tks for the site reference I'll explore . Got to go to an auction tomorrow. That is one way I supplement our income. Buy junk and sell it for more than I pay for it. ha. Hey my wife takes (darn just can’t stay away from potatoes.ha) left over mashed potatoes and puts some on wieners split in half and tops with cheese and bakes . I thing she calls them Weenie lotus.
We also like to patty mashed pots and fry them in a non-stick like hotcakes.

Gosh can’t resist this one ; Shred up a preferably red pot on a fine grater mix in some onion spread very thin in a non-stick . when brown turn over and when brown place some cheese on it and turn over half on the other half (like an omelet) turn over and over until the cheese melts some. Ha.

You are right about them not browning in water. Supposed to be healthier, but I find that if I really want them browned, I do use a little veggie oil. I have problems with really greasy foods. have to watch it. Stomach upset, doncha know. (Something tells me you probly already know.)

I like your wife's weenie recipe. Sounds good. By the way, have you noticed that no one else has posted to this thread? I don't think too many people visit Kath's Kozy Kitchen on a regular basis. I spend most of my time in my kitchen. Whenever I can visit someone else's kitchen, I jump at the opportunity. Thanks for sharing your recipes. This thread was supposed to give *you* some new ideas and the opposite has happened. :lol:
