86 degrees, sunny skies with marshmallow clouds everywhere!

Working on my car this weekend! Strange things are going on with it. My brother is on it. I have a long drive to work every morning at 5:30 a.m., and when the car goes into "limp mode"...it is scary. Especially with folks driving so fast behind me. I have to pull over to the shoulder, turn off the car and start it again...reboot, as it were. *sigh!*

Dinner will be a pinwheel flank steak, stuffed with spinach and mozzarella, and a rice side dish.

How about you? Share a square or just "What's for dinner?"

Has No Life - Lives on TB
Winter is having its last "hoorah", before summer begins right now in our section of Mississippi. Only 61 degrees for our high, today, with a frost advisory for tonight. The wind chill makes it feel even colder. We've been enjoying 80+ degree temps, and now, this! We have the small propane heater going.

I made meatloaf last night, so tonight will be left-over meatloaf and cheddar cheese sandwiches and roasted potatoes.

I'm doing beef stew with pearl onions and baby carrots in the slow cooker. It should be done in about another half hour. I found more frozen garlic bread when I was cleaning out the freezer, so I'll have the last of that. I made enough stew to freeze for 3 more meals.

I should cook up more stuff for this week, but it's really nice out. I may pop a small portion of the stew in the microwave to finish it and take it out to the lake to eat and then go for a walk: full sun and low 60s! It's hard to hang out inside . . .

The rain has finally moved on, got 2 inches in my rain gauge. Most of the rain was north of my area today so I got to run in the 5K without getting wet :) Won a plant of some kind.

I have a pork tenderloin in the crockpot, should be ready soon. I have a hankering for protein so probably will just eat that by itself, raspberry cheesecake for later.

60s, pleasant and sunny. I overseeded grass on my dam. It was in worse shape than I expected. Nibbling through the day, blueberries, green beans, cauliflower, chicken wings, bread and butter. Love bread and butter, it is like cake with icing to me.

My birthday is this week so I took the weekend off. Yesterday was a beautiful day to attend Bear In The Square Arts and Music Festival. There was a taco truck there with a good variety of tacos. I had two different ones and they were delicious. Today I attended Church and went out to eat at Longhorns with the family. I had the parmesan encrusted chicken with a sweet potato and broccoli...Yummy...Then had cake at my friend's house...Now to chill and psych myself up to go to work tomorrow...lol I think I will have a glass of wine later to finish the weekend off right. Hope everyone had a Blessed Day.

We had a big breakfast and late lunch of cheeseburgers and fries so no dinner. It's 92 here today and had a laugh when I told our Niece in Upstate, NY what our temp was. She texted back it was 40 with snow flurries. I remember fishing in snow at the opening of trout season but this is kinda late for snow.

Beautiful day today. Mid 70s. Clear sunny skies.Got the Jasmine pruned and husband daughter and SIL were busy in the garden. Garlic is three feet high.

Supper is BBQ tri tip, baked taters and grilled asparagus.

Life is better in flip flops
This afternoon we had our daughter and grandson here with us and they had dinner with us. We had boneless porkchops that I cooked and diced into a fresh mushroom gravy along with jasmine rice and cream corn. No dessert this week but we did have bananas which our grandson loved!
Seabird, I can relate to your car issues. Mine is 11 years old and seems to be always suffering due to age. In addition, our DD's car has had many issues lately. We have spent ALOT of money between her vehicle and mine :(

With it cool in my area this weekend(I think the high was around 60 and low tonight in the upper 30's), I decided on Friday that tonight's supper would be turkey and homemade noodle soup. I boiled turkey legs and thighs Friday afternoon and then refrigerated the whole thing until I got home from work today. Made the noodle fresh after work and enjoyed a hot delicious soup for supper.

North to the Future
While missing my Alaska pre-spring Break Up season during my Washington sojourn to help a brother….it’s been lovely to see cherry trees and apple trees in full bloom as well as actual blossoming of lilacs! My brother is finally turning the corner and getting better…so I’m hoping to hop a plane north in the next week or two.

He was good and hungry today and docs want him on high protein, so I grilled him a steak to share with me as well as some of my Music garlic from my garden I brought down for him. We had sunshine, rain, sunshine, rain all day. And, yow in the 60s in April is lovely…as are all the early birds I hear upon waking.

If I get to fly north in the next week or so, I’ll enjoy spring green-up all over again. PTL my brother is doing so much better…it’s good to feel happy again,,

Happy birthday everyone!

I made comfort food last night; DH has been really sick so it was meatloaf, leftover masked potatoes, I also did some white rice, mixed vegetables, toasted bread.
Saturday night was ham.

He ate big servings both nights. He said it made him feel good so I was happy with that.

The meatloaf turned out SO good I could have stuffed myself lol.

Kroger has been selling a ground beef/ground pork mix in 2lb mixture, so that’s what I used this time for the meatloaf
It was so much lighter and barely and grease in the pan!
I highly recommend using it if you all see that in your Kroger store.

I've really gotten into using the 50/50 mix for a lot of dishes. Grown to prefer it in chili, meatloaf, hotdish, meatballs, Sloppy Joes, etc. It doesn't dry out, has more flavor, and is a money saver. Usually it's cheaper by a buck/lb. than straight beef burger because ground pork is cheaper than beef all around.

I’m glad to hear someone else knows about this too, and loves using the mix!

7$/2lb isn’t bad especially since I use it in things that’ll make two meals.
Spaghetti, chili, meatloaf etc….

I really like it. Kroger doesn’t always have it so I look every time I go in.
