Fish Need recipes.

Okay. I'm looking for recipes that don't try to complete overwhelm the flavor of fish but instead bring it out and compliment it. I have bags of about a half dozen varieties, Swai, Pollock, Cod, Salmon, and I forget what else. And I swear every recipe uses lemon and butter. Or breading. And I'm already having to consume more carbs than I have in a long time. (Seems I wasn't eating enough carbs most days. Or consuming enough salt. Or enough fats. Geez.)
I have a cooking salt block and planks coming so I can try those. I have a smoker but it's not set up yet. (That's on the list for this weekend or next weekend.)
Shrimp and crab recipes (already out of shell) are welcome as well. The only thing completely off the menu is scallops. DS has a strong allergy to them. Oh, and raw fish is out.
Canned tuna and salmon recipes that avoid mayonnaise are also welcome. (Yeah, dairy is a problem.)

here's something we Raggedies think is pretty tuff to beat. on your salmon - in a small container that you can cover - one just right for the size of your fish . . . some accent and some granulated garlic to both sides. next a good sugar free teriyaki like G Hughes; we just drizzle the marinade over the fish on both sides. and add a bit extra so you have a little in the bottom of the dish to brush on or drizzle over you fish while its cooking. marinate overnight covered. toss it on the grill and let it cook - but not too fast. drizzle or brush a little of that marinade on while its cooking and don't hesitate to use more GRANULATED garlic as your grilling it. its a very delicate taste with a touch of teriyaki that's not overpowering the fish. works very well on trout too

here's one for canned tuna that makes an excellent salad . . .

2-3 can tuna
1-2 can cannallini beans (white kidney beans)
1 medium/large sweet onion chopped fine
GRANULATED garlic - as opposed to the powder - MUCH better taste IMHO but then YMMV
EVO
balsamic vinegar
salt

open and drain the tuna and beans and toss them together in a bowl. add chopped onion, granulated garlic, balsamic vinegar and EVO. toss it all together. you'll need adjust the amount of vinegar salt EVO and garlic to your own tase and preference. we like about 60-40 beans to tuna ratio for us thats 3 cans of tuna and 2 # 2 1/2 cans of cannalleni's . . . pretty good stuff and a great light lunch in the summer

In this house, it's fresh. The son loves garlic. I spoil him.

We love cod in our house! I put mine in a pan, put chicken broth in with the fish--not enough to cover it--and top the fish with garlic powder, onion powder, black pepper, and a pinch of cayenne. Soooo good! Cook it at 400 degrees until it's flaking apart, usually about 45 minutes to an hour. Easy peasy to make and tastes fabulous! It's even better with garlic and sour cream mashed potatoes! Yum!

good for you - in this house there is no such thing as "too much garlic" :D
Not in this house either. Although that may change with home grown garlic. Those bulbs smelled absolutely flavorful and divine when I pulled them to prep for this fall planting.
