MARANTHA!! Even so, come LORD JESUS!!!
I had about 4 dozen extra eggs, so I decided to pickle them since the last ones turned out so good!!

This time, I used not only pickling spices, but also Tony Cache-re's (SP??) seasoning. I have no idea of how much I used of any of them, just put it in the vinegar until it looked reddish and added about a cup of pickling spices, then boiled it all up and over the eggs it goes!!

We shall see>>>>>now, I can hardly WAIT to taste them!!

Yum! I make pickled eggs (using local eggs of course) every week to stay ahead of demand here :)

Sometimes spicy with a few chopped jalapeños (maybe some day I can grow those), but always really good. Put them up by the dozen - and yep, I have cooking and peeling the eggs down perfect. No rubbery ones. Always good to have on hand!

And mine are SOOOOOOO much better than any I have ever had anywhere>>>>>do you suppose it's JUST ME that believes that?? LOL!!

I want to make some with the red vinegar from my pickled beets, but haven't done that so far!

Oh, I JUST made a pretty jar using some of my red beets. Now I think that I should do the same with my golden beets too - I put up cauliflower pickles the other day with my own golden cauli and golden beets, and they look so pretty! :). Hard to keep them in stock around here!
