Uses almond flour and raw peanut butter. Or is supposed to. I did use the almond flour but just used regular, smooth peanut butter. Also, I used regular milk rather than almond milk as I haven’t found one that I like yet.
Keto Peanut Butter Muffins
1 cup almond flour
1/2 cup granulated sweetener (for now I am using Swerve brand but it is pricey so use what you have)
1 t. Baking powder
pinch of salt
1/2 cup raw peanut butter (or whatever you have/prefer, smooth or chunky)
1/3 almond milk (sorry, I used regular milk)
2 eggs
1/2 cup sugar-free chocolate chips (I just used dark chocolate chips)
Preheat oven to 350F. Line your muffin tin with muffin cups. I used cheap-o ones but you could use cute or holiday ones if you are so inclined. Me? I used what I had. LOL
In a large bowl start by combining all of the dry ingredients except for the chocolate chips. Combine thoroughly. Then use a wooden or other stiff spoon to beat in the peanut butter. Then do the same with the milk. Once you get there add the eggs and mix in one at a time. Lastly fold in the chocolate chips.
Spoon evenly in the muffin cups and then bake for 20 minutes. Allow to cool completely before trying to eat them otherwise they are going to be too soft. They need to firm up as they cool.
