Baking Kansas Kids' Cake

Kansas Kids' Cake
1/2 cup butter, softened
1/4 cup peanut butter
1/4 cup honey
2 eggs
1 tsp vanilla
1 cup all purpose flour
1 cup whole wheat flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
3/4 cup buttermilk
Cream butter, peanut butter, and honey together. Add eggs and vanilla. Mix together dry ingredients and add alternately with buttermilk (this batter is thick). Pour (spread) into greased and floured 9x13 pan. Crumble topping over batter and bake at 350* for 25-30 minutes.

Topping: Mix 1/2 cup peanut butter, 3/4 cup of sugar, and 2 tablespoons of flour until well blended. Stir in 1 cup chocolate chips.

I made a half recipe in an 8x8 pan. very yummy!

Sounds great! Do you think it matters if I use crunchy PB?? That's all that I stock. Also, I don't have whole wheat flour . . . what do you think . . . just double the all purpose flour? :)

This reminds me of a shortcake. I'll let you know if I ruin it!
