Canning Is it safe?

So I've canned up a bunch of green beans over the past 2 weeks and finally just got to the extension office to get my gauge checked. It's 2 lbs off. :( I really don't want to toss all of these. Strange part is that although they say it is 2lbs off, my gauge says 15lbs when the pressure regulator starts jiggling in earnest, which is the correct pressure that it is supposed to start jiggling. Wouldn't that indicate that my gauge is accurate? Doesn't make sense to me.

Well, IIRC, you only need 11 psi for green beans. So even if your gauge was off, you were still in safe range. The jiggler was confirmation. But I would go ahead and order a new gauge. And maybe find a local radiator mechanic that can double check your existing gauge, just to be sure it was your gauge and not their equipment.

Well I'm above 2600 ft. Elevation.

Hmmm. My Ball Canning book says green beans need 10 pounds pressure. I'm at 375ft above sea level. 15 lbs is needed above 1001 ft above sea level.

I've run across so many that now say 11 psi, that I just go with that as basic. And I didn't know her elevation, so I could only go based on mine.
They keep changing things, so I was curious as to if I missed something or not. I do keep buying the new books as they come out every few years because of that.

Jarden sold off Ball. The new owners, Newell, keep releasing new books. Since they are not showing new research, all I can conclude is that they are using recipes that Jarden removed from manuals over time due to "consumer preferences". Like the "new" recipes for onion soup and peppers that are actually found in really old Ball books.
But my PC absolutely refuses to remain below 15 psi unless I keep continually micro adjusting the burners, which I won't do because it makes siphoning worse. So I'm covered regardless at this point.

Actually a weighted gauge is different than a dial gauge. I have a dial gauge, which means that I need to can green beans at 12 psi for my elevation. If you're using a weighted gauge, it would be 15 psi. I'm not sure why the difference, except that the weighted gauges, don't have a 12, so you have to go up to 15.

My brand new All American gauge was off by five pounds after being tested at Ace hardware. I had the gauge tested because the canner sat unused for five years after I bought it. I just adjusted how many pounds I used and the company sent me a new gauge after I called customer service and I used the return label they sent me to ship the defective gauge back to them, they wrote me back and said that the gauge was defective.

I WISH I could get ahold of an All American. I kept putting off buying one because we were moving, and now there is none to be found anywhere. Canning on the camp stove is going to wear out my old Presto canners.
