I hate to make cookies

I would love some basic ideas for BAR type goodies.

I keep most baking supplies in the house but with christmas approaching I could use some new ideas here.

I also have some recipes that I've 'lost' along the way that I'd love to find again.
One has like a pastry bottom then a cream cheese layer and then a pudding layer and then cool whip on top? Oh how I miss that!

There was also a layer bay that had sweetened condensed milk and coconut and chocolate chips and some other stuff....

(I lost my storage place a few years ago and all my cook books and recipe holders were in it :( )

I mostly would like just everyday stuff, like oatmeal peanut bars or things I can make that are somewhat healthy for my 16 yr old step daughter to take with her to school.

peanut butter no-bakes

This is a recipe called Peanut Butter Whimsies that our elementary school has made for years. Sheetz stores sell them now, but for many years we couldn't get them anywhere else. My husband would beg my kids to sneak one home from school for him. I have to make them every time we go camping, or young and old alike pout, LOL! They are made just like the chocolate no-bakes, except that I put them in a pan and cut them like bar cookies because they seem to stay soft longer that way.
2 cups sugar 3 cups oatmeal (dry)
1 stick margarine 1 tsp. vanilla
1/2 cup milk 1/2 cup peanut butter
Bring sugar, butter and milk to a boil for exactly one minute. Remove from heat and add last 3 ingredients. You can drop by the spoonfull on wax paper, or put in a pan, cool, and cut into bars.
I usually make two batches and put them in a 9x13 cake pan or something similar in size. Don't double the recipe though, make two seperate batches or it doesn't seem to turn out right.

Here is another easy one that my family loves.
Camper's Cookies
2 cups flour 1 cup margarine
1 tsp. baking soda 1 cup white sugar
1/2 tsp. salt 1 cup brown sugar
1/2 tsp. baking powder 2 eggs
1 tsp. vanilla
2 cups oatmeal
6 oz. chocolate chips ( I use semi-sweet)
1/2 cup walnuts
Sift together the flour, baking soda, salt, and baking powder. Cream the margarine and sugars together. Add the eggs and beat. Add the flour mixture and mix well. Add the vanilla, oats, choco chips and nuts.
Grease a 9x13 pan and press mixure in evenly. Bake at 350 for about 15 minutes, or until it starts to brown around the edges.

This is a one that my mother in law always made and refused to give out the recipe. She told me she'd give it to me after we were married for 5 years!
Halfway Cookies
1 cup shortening 2 cups flour 2 egg whites
1/2 cup white sugar 1 tsp. baking powder 1 cup brown sugar
1/2 cup brown sugar 1/4 tsp. salt
1 table water 1 tsp. vanilla
2 egg yolks 1 pack(?) semi-sweet choco chips
Mix all except choco chips and spread in a 9x13 cake pan. Sprinkle chips on top and press in slightly. Make a mixture of 2 egg whites and 1 cup brown sugar and beat hard, then spread on the other mixture. Bake at 350 for 20-25 min. Cut into squares.
Hope this helps you a little. I hate baking cookies too, so I really like the bar cookie types.

Chocolate Peanut Torte

This one sort of looks like the one you mentioned.

2 cups vanilla wafer crumbs
1/3 cup butter or margarine, melted
1 cup peanuts, finely chopped, divided
1 package (8 oz) cream cheese, softened
1 cup confectioners sugar
1/2 cup peanut butter
4 cups whipped topping, divided
3 cups cold milk
2 packages (3.9 oz each) instant chocolate pudding mix
1 milk chocolate candy bar (1.55 oz) grated
Combine wafer crumbs, butter and 2/3 cup peanuts. Press into an ungreased 13 x9 baking dish. Bake at 350 for 8-10 minutes or until lightly browned. Cool. In a mixing bowl, beat cream cheese, sugar and peanut butter until smooth. Fold in 2 cups of whipped topping. Spread over crust. In a mixing bowl, beat milk and pudding mixes on low for 2 minutes. Carefully spread over cream cheese layer. Cover and refrigerate for 4-6 hours. Just before serving, carefully spread remaining topping over the pudding layer. Sprinkle with grated chocolate and the remaining peanuts.

2 Chocolate inst pudding, larg

Cool Whip

1ST LAYER: Mix all together and press into a 9 x 13 pan. Bake at 350^F for
15 minutes. 2ND LATER: Mix together and spread over cooled crust. REMAINING
LAYERS: Prepare and layer in order given. Top with the Cool Whip and grated
some chocolate over all. Keep refrigerated.

magic cookie bars

1/2 cup butter, melted
1-1/2 cup graham cracker crumbs
14 ounce can Eagle brand sweetened condensed milk
6 ounces semisweet chocolate chips
3-1/2 ounce can flaked coconut
1 cup pecans, chopped

Directions:

Preheat oven to 350 degrees. In a 9X13 baking pan, pour melted butter. Sprinkle graham cracker crumbs over butter then pour sweetened condensed milk over the crumbs. Top with remaining ingredients. Bake 25 minutes. Cool. Chill in refrigerator for 2 hours. Cut into bars.

Sex in a Pan

Take this same recipe and change the walnuts in the bottom crust to pecans.
Change the pudding to 2 boxes of butterscotch pudding and you have my favorite dessert called "Watergate Dessert". (The name comes from the hotel not the Nixon thing.)

Apricot Honey Oat Bars

1 1/2 cups rolled oats -- not instant
1/2 cup dried apricots -- finely chopped
1/2 cup honey
1/4 cup fat-free plain yogurt
2 large egg whites
2 tablespoons wheat germ
2 tablespoons whole wheat pastry flour
3 tablespoons margarine -- melted
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 teaspoon salt

1. Preheat oven to 325 degrees.
2. Spray 8 inch square baking pan with non stick cooking spray
3. In a large bowl combine all ingredients; mix to blend
4. turn mixture into prepared pan, pat down and smooth top.
5. Bake until center is firm and edges are lightly browned, about 25 minutes.
6. Cool and cut into squares

Got this one from a Backwoods Home magazine:

Chocolate Chip Nut Bars

1/2 C. whole wheat pastry flour
1/2 tsp. baking powder
1 egg
1/4 C. honey
1 tsp. oil
1/2 tsp. vanilla
1 C. chocolate chips
2/3 C. broken walnuts or pecans

Oil an 8"x8" pan and line with baker's paper. Preheat the oven to 325 degrees.

Sift together the flour and baking powder. In a medium bowl, beat together the egg, honey, oil and vanilla. Stir in the flour mixture, and then the chocolate chips and nuts. Scrape into the prepared pan and bake for 25 to 30 minutes, until top is lightly golden.

Cool thoroughly on a wire rack before slicing. Slice with a long serrated knife. Store in an airtight container.
