Misc Have any of you grown amaranth?

We grew red and golden amaranth. As a “cereal” not grain, it is gluten free.

We are looking for recipes on using it.

Not intentionally. Red root pigweed is a huge nuisance weed around here.

Never “grown” it……never had to.

Treat the seeds like buckwheat, for recipes.

The young plants are very serviceable potherb or salad addition.

Treat the leaves like spinach….the stems like asparagus.
