Food Freeze Dryer

Ok so since I’ve had to go through all my stores of food and,this killed me, had to toss tons of damaged food, I’ve started looking a freeze drying again as everything freeze dried in Mylar has survived the purge.

What are your experiences with home freeze drying and what equipment have you used?

I‘ve been looking at the Harvestright machines and looking for alternative brands but they seem to be it. Has anyone used one? Pros/cons. Oil or oil free pump? Let me hear your story.

Love mine. Saying that, they cannot ship to Oklahoma (something about their web site and the sales tax Oklahoma requires). We did manage to find a dealer 'local' to us that we purchased from. Had a glitch with it, after a few months, where it couldn't achieve a vacuum and they finally sent us all the business end (ie electronic parts), and we are back in business. I need to find a place to get good mylar bags that I can order online. If they (Harvest Right) can't ship to your area ask them if they have any dealers that may not be far from you. I know that Atwoods (farm store) has started to sell them in some stores, but don't know about the accessories/supplies that go with them yet as it was Hubby that spotted them yesterday not me.

To date, we have done ground sausage, ground beef, ham, pork loin, tons and tons of my homegrown eggs, quite a bit of cheese, and some chicken. I did do a batch of peas to see how they are, as well as some of the bell peppers that I grew last year. We ended up getting a 2nd set of trays so that we can be doing the 'prefreeze' while one is currently in the freezer.

We don't run ours during the hottest times of the year (yet), but many people just put a fan on the pump and go on.

A lot of people buy the machine and do candy to sell locally (or online where your state laws allow). Things like skittles, bit of honey, etc. We tried a tray of skittles but didn't like them, but I can see where others would purchase the crap out of them. Doing this can possibly pay for your FD in short order. Go to Etsy and search on freeze dried candy. ;)

As we are about to get another half a cow, we are trying to freeze dry a lot of the meat currently in the freezer. At least that way I know I will have protein going forward. I love snacking on say the cheese or the sausage. I want to do enough veggies and fruits to be able to powder them up to add to baking and cooking items for additional flavor, but need to process protein first. I also look forward to doing things like fried rice, spaghetti, etc that are full meals almost ready to eat.

Also, if you really are considering one, you will need to think about storage. We are currently putting our batches in either mylar or half gallon jars and are running out of both. I've heard all of the mylar bags aren't good quality, so I need to find some that are good to purchase. I've got a local source for my oxygen absorbers, and have probably about 400 here in reserve should they get hard to find.

They are selling them in TSC stores and North 40 around these parts. You may want to look there.

I do have a large freeze dryer, but because we are in between homes, I have not had the chance to use mine yet, but I belong to several FB freeze drying groups and watched MANY youtube videos about them before I purchased.
Harvest Right seems to have mixed reviews regarding customer service. I believed it was worth it to get one.

I had the original pump go bad after about three months; they replaced it free of charge. A relay board or something like that went out last month; it was also replaced free of charge. I've dealt with several different customer service people there over the past year. The first one was not at all helpful and kinda made me mad. Everyone else has been absolutely fabulous.

We had our dealings with Customer Service. There is one lady (can't remember her name), and she knows her stuff inside and out. Another man (we had before her), not so much, but he was promoted. Isn't that the way it always is?

We have the medium. This week alone, I've done 24 lbs of sausage. I need to get stuff ready to roll over the next couple of days. We've had terrible cold weather the past two days, and I didn't want to start another load just in case we had a power outage.

I do love it, and wish we hadn't waited so long to buy ours.

So . . . new gutters on the house (done), new garage door (done), new fridge (still looking), freeze drier (will be pulling the trigger this weekend), new Berkey system and water storage, pouring a slab to widen the driveway (still looking) and food/supplies. Mebbe a trip to a gun and ammo store, mebbe. After all that, back to genteel poverty.

Thanks all who provided info and links. I have been wanting a FD for a while, just could not bring myself to do it because of the cost. I am all set up for canning but as I get older, those darn jars are getting heavier, right? Now I have a little bit of money not allocated to anything so I am getting some stuff taken care of.

I am all set up for canning but as I get older, those darn jars are getting heavier, right? Now I have a little bit of money not allocated to anything so I am getting some stuff taken care of.
Congrats on things starting to come together for you. Until we go full solar (which may take a while), we are at least thinking of getting enough to ensure that the well pump and a couple other things work during a power outage.

I worry that at some point in time, they will classify water as a mineral and not let us (anyone on wells) pull the water anymore. We've been thinking of a large water catchment system as a just in case (think about a life uncontained youtube type system). At the very minimum, it would help with watering the garden. Saying that, it is a gamble as we appear to be about to enter the drought that the west is currently in. We've noticed a lack of any substantial rain and are so very dry. We struggle with the outlay of the $$$$ if we might not get the rain. Decisions decisions decisions.

Oh, and on the FD, we have been putting certain things in half gallon jars that we FD. We're keeping them out of light and temperature controlled and included Oxygen Absorbers, and they are also under a vacuum. We are pulling a 22 lb vacuum with a (new unused) brake bleeder. Good luck, and again, congrats on the steps that you have done recently.

I don't have one but I've always thought it was the kind of thing that 2 or 3 people should/could go into together and share. That would help to spread the costs and no one needs a machine 24/7.

Good chance that all stores do.
At the moment, I don't need a second one. LOL I am hoping that they start to carry the mylar bags, as I seem to be having an issue finding good ones. I can't order from HR, cause they won't ship here. There is a hardware store in Jones that oil is purchased from, but I haven't seen the mylar there yet. I did manage to get a 2nd set of trays. :D

I've seen people posting about doing cream cheese and heavy cream. I know they won't last as long as say eggs, but it will be nice to have some of my favorites tucked back. Alas, that will need to wait a while as protein is the name of the game.

Strange coincidence yesterday as far as Harvest Right is concerned. I received an email from Harvest Right (Dave) talking about the lead time to get a FD (currently 6-8 weeks for small or medium, and 10-12 for the large), and saying a 1000 down will get me 'in there' and I can pay it off... No time is better to buy one... blah blah blah

I replied that we had purchased one locally last year due to them not shipping here. The place we purchased ours from had indicated it was something to do with taxes on their site, but that isn't the issue. For some reason they will not ship a FD to Oklahoma. They will all of the accessories.

I had indicated that I was looking for the mylar bags. When he said that they do ship here, I made my order this morning.

I have a place local that I get the 300cc OA for under 10 bucks (I think 5.99 rings a bell), so I didn't order those from them. I have a few hundred waiting to work. ;)

As far as Mylar bags go you can get them on Amazon. I’ve also seen the O2 absorbers on there.

I’ve gotten bags though cheaper in some cases from sorbentsystems.com out of Fl and CA. They have bags, O2, silica gel packs, sealers etc.

Well I pulled the trigger and bought one. Got it locally and lucked out as the local location still had them priced at the old price $500.00 less than the current models prices but the unit I got had just got there!! It was the current model with the premium pump.

I’ve barely had it turned off since I got it put together!!

With the way prices are going up here in the last few weeks I’ve gotten it just in time!!!!!!

Fresh out of the freeze dryer. The strawberries are delicious, but man the raspberries. Such tart little tidbits. 80 more eggs about to go in. Just so everyone knows, these do have the OA in there, and they were put under vacuum. I did keep a small mouth of raspberries just to snack on.

Mine will be here Monday. Ordered on Feb 2 (had planned to order several weeks before but falling on my butt and dealing with pain caused me to put it off) and it will be here March 7, and one week was in transit, so that is not too bad. Quicker than I thought it would be.

I am also going to order some of the accessories: extra trays, tray lids as they can also be used to freeze dry in allegedly, silicone mats, and maybe one of those silicon mold cup thingies or tray dividers -- have not made up my mind on that yet..

Has anyone noticed any difference between storing in vac-sealed, O2-absorbed glass jars or in O2-absorbed mylar bags?

I think my grandson and his BIL (super-nice guy) may be interested in using it at times, so she is going to be getting a workout, God willing and the creek don't rise.

Go for the extra trays for sure, as you can be freezing something (like eggs) while other things are processing in the FD. We haven't got the tray lids, and don't know if we will. I use the basket in my chest freezer to stack the trays while I prefreeze. I use 2 chopsticks across the tray to hold the next tray up. Hint for you: If you FD raw eggs, put the tray in the freezer FIRST, then pour the eggs in. Less likely for that huge egg mess. ;)

I purchased 2 silicone pastry mats that I cut into half that fit the trays perfectly. Way cheaper than theirs. Also, you don't need it for most things. Parchment paper is also good to use.

I store my OA in glass jars, and haven't had any issues. I put the indicator in, so I can see that they are still good. Granted, I fill all of my jars and/or bags then open the OA container to get them to put in my containers and close the OA container back as quickly as possible. If you have a Winco around you, look for OA back where they have their bulk items. I get them and haven't had any issues so far. Just make sure the indicator is pink and not blue when you purchase. Don't use their large mylar bags, because they are thin(Winco).

If you store in glass jars, get a new brake bleeder, and you can put a vacuum on your jars if you have the old lid fixture for a food saver. We draw 21 lbs, and haven't had any issues.

I got the lids and an extra set of trays and mats for all my trays.

I got these tray dividers which I like


i got the lids, mats and also their tray dividers. These dividers are good as well.

My neighbor and best friend has a freeze dryer and she freeze dries batches of things I want preserved. I prefreeze things in my chest freezer and then take them to her to be freeze dried.

My favorite guilty pleasure is FD dollops of honey/vanilla or black cherry yogurt. Oh, Mercy! I doubt those flavor bombs will last very long in storage!

Well, mine is here but I had to almost go hand-to-hand with FedEx to get it. I think the person I talked to first decided to punish me for disturbing her in her leisure time. It has been sitting in a freight warehouse in Jax, Florida, four hours from my house, but nothing nobody could do. It was classified as a delivery exception. I finally noodled around the FedEx site and found the number for complaints. It called to me like a siren song. I talked to a guy and told him the story (too long for this forum). I told him this is a $3K Piece of equipment and I want it -- is that wrong? He said no and I could hear keys clacking. Then I asked him well how do I escalate this so it can get delivered. He said Oh ma'am you have just escalated it. I thanked him very much and checked into FedEx tracking later that evening and it was moving, made it to Tampa the next day and then was delivered on Monday. Unfortunately, I been feelin' poorly (autoimmune crap) and have not set it up. but tomorrow being Sunday, I will get some muscle boys (grandsons) over to pick up and place it on the counter.

Hope little Ms. Well-my-screen-is-different-than-yours-and-we-do-not-have-it-in-Jax got to have a private meeting with her boss, and I hope he listened to that phone call that was recorded for training purposes. Lol.

Really looking forward to putting her to work.

Bit the bullet. Something I’ve wanted for years but it appears, based on reviews, that it was a good thing I waited. Watched a review by a blog “retired at 40” that gave a great comparison between the one he got three years ago and his recent purchase of an additional one.

When I purposed it says just processing the order is 8 to 10 weeks out then I’ll have to see how quick it ships. Gives me time to make some plans and to stock up on pre-frozen items.

We are throwing a lot of money at the BOL and expanding our food preps. Even if God smiles and disaster never strikes, I have a pretty good idea that this will help us ”retire” earlier. Or at least change our lives from the hectic chaos we currently live.

Once I took seriously what having one would mean, I was surprised at how large they were. Please note, if you go for the large one, even though it is only 110, they recommend you only use it on a dedicated breaker. For that reason I stayed at the medium even though the larger was a temptation. The amount of noise they make also isn't a treat. I am going to set mine up on a heavy duty rolling cart (like you'd find in an auto tool department) that is large enough to hold the freeze dryer and the pump. I'll then be able to roll it into the garage or onto the lanai.

It is also very ... VERY ... heavy. The entire set up is around 200 lbs.

Lots of little things that most wouldn't think of. Delivery time is another one ... 8 to 10 weeks. Yowzer.

I got the large and because of the electrical issue, I kinda wish I'd gotten the medium. I have a few friends who got the medium and wish they'd gotten the large. I'd guess the pros and cons are pretty evenly divided.

No one ever wishes they'd gotten the small.

Most people aren't willing to pay attention to detail and learn how things work.

They have the microwave mentality...push the "popcorn" button and come back in 3 minutes.

just keep in mind that those are the people that have had problems. I understand they are now producing and shipping 5000 a month. Last year it was significantly smaller numbers.
