I have found lots of keto recipes on Pintrest. I get alerts sent to my email of ones they think I would be interested in. This recipe for Fat Head Pizza caught my eye and I think I will give it a try. I have made the cauliflower pizza a few times and it is good as well.

Fat Head Pizza - The Holy Grail

Ingredients

1 3/4 cups pre shredded/grated cheese mozzarella is the best or Edam/mild cheese
3/4 cups almond meal/flour
2 tbsp cream cheese
1 egg
pinch salt to taste
1/2 tsp dried rosemary/ garlic or other flavourings optional
your choice of toppings such as pepperoni peppers, cherry tomatoes, olives, ground/mince beef, mushrooms, herbs etc

Instructions

Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
Stir then microwave on HIGH for another 30 seconds.
Add the egg, salt, rosemary and any other flavourings, mix gently.
Place in between 2 pieces of baking parchment/paper and roll into a circular pizza shape (see photos above). Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
Make fork holes all over the pizza base to ensure it cooks evenly.
Slide the baking paper/parchment with the pizza base, on a baking tray (cookie tray) or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.
To make the base really crispy and sturdy, flip the pizza over (onto baking paper/parchment) once the top has browned.
Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 220C/425F for 5 minutes.

Recipe Notes

Fat Head pastry can also be made by replacing the almond meal/flour with 1/4 cup (4 tbsp) coconut flour.

Thanks! I do Keto (and really love how I feel on it) and this looks like a step above my usual cauli-pizza! Will try this weekend! :)

DEEP DISH PIZZA QUICHE*

4 oz softened cream cheese
4 eggs
1/3 cup heavy cream
1/4 cup parmesan cheese (grated)
1 tbs chives
1/2 tsp Italian or pizza seasoning
2 cups shredded cheese (I use mozzarella/cheddar mix)
1/2 tsp wet garlic or 1/4 tsp garlic powder
1/2 cup lowest carb tomato or pizza sauce
1 cup mozzarella cheese
Toppings to taste (I use pepperoni, sausage, onion, green pepper, mushrooms, whatever!)

Preheat oven to 375.
Beat together cream cheese and eggs till smooth
Add cream, parmesean cheese and spices.
Grease a 13x9 glass baking dish
Put 2 cups of shredded cheese in dish and pour egg mixture over.*
Bake at 375 for 30-35 minutes.
Remove from oven.
Spread with sauce and then add your toppings.
Cover with mozzarella cheese.
Bake till browning and bubbly
Let stand for 5 minutes or so.
