Eggplant Stir-fry

Peel large eggplant and chop into small squares about 1/2". Sear in wok or large frying pan with oil and a large sprinkle (about 1 tsp.) of ginger. Add soy sauce to taste (about 1/4 - 1/3 cup). Let eggplant cook in sauce and add 1 large onion diced, 1 tsp. of minced garlic. Allow vegetables to simmer and absorb soy. Wash, dice and add an 8 ounce package of fresh mushrooms. simmer all untill mushrooms are soft and tender. Serve over steaming rice. Brown rice or wild rice is best. MMMMM!!!

Eggplant Casserole

Peel and chop 1 large eggplant add to heavily salted boiling water in large pot. Boil until very soft. Drain in collander and mash eggplant until concistancy of mashed potatoes.
Saute in butter or oil:
1 large onion, minced
1 pound of ground meat, beef, turkey, pork, whatever
1 - 2 T of minced garlic....to your taste
Add sauted vegetables and meat to mashed eggplant and stir.
Add to the above:
2 -3 beaten eggs
1 cup of dry bread crumbs
8 oz. cream cheese
16 oz of grated hard cheese, I usually use Cheedar, but others are good too.
1 can of Ro-tel
Taste, and season according to your desires with cilantro, oragano, parsley, chili powder, or other seasonings. It should be spicey, but remember the heat will increase as it cooks. The final mixture should be the consistancy of home-made dressing for turkey, before it is cooked. Pour all into greased 9 x 12"baking cish and bake at 359 degrees for 50 minutes, or until brown on top and a wooden matchstick enserted into the center can be removed and it is clean. DELICIOUS!!! Freezes well.
