You are better off with freeze dried eggs. Egg replacer is a finicky item.works great in some recipes, horrid in others. And don't try to make egg dishes with it. That's just gross.

Why not just store dried eggs like kyrsyan says? That is what we do.

I have used egg replacer with good results in baked goods. I consider it a good addition to a deep pantry. It saves my eggs for other things when baking.

Don't get me wrong. We use egg replacer because my son can't have eggs. But it has its place and if you aren't used to it, you can get some nasty results. It is not meant to replace egg in any way except in baking, no matter what they tell you.

And it is no longer the cheap item it once was. Used to be I could get a box for less than a doz eggs. Not that way anymore and the eggs aren't cheap either.

I've done the flax egg replacer trick too. It worked fine for baked goods.

Aquafaba, the liquid from canned garbanzo beans, makes an excellent egg substitute in baking. It also makes a great chocolate mousse and really good whipped topping. Oh, and fabulous eggless mayonnaise.
