Food Dried potatoes

I just ordered dried potato slices in bulk. Anyone have recipes to use them? Thought they would keep longer than potatoes. Going to get 100 lb of them as well

Are they freeze dried, or dehydrated? I like using the dehydrated to make things such as Au Gratin potatoes, and scalloped potatoes. I also make a homemade version of hamburger helper with them. I've never used the freeze dried, but I imagine they would crumble?

Deemy, as the other folks have said - au gratin or scalloped potatoes, or pretty much anything you see in the Betty Crocker type boxed potato mixes in the stores. I like to get the dehydrated hash browns as they cook up quick in things like hash brown cassarole and soups.

I'm sitting here waiting for my heart rate to slow down. I was cleaning the fridge so had a pan of stuff to take out to the compost pile. I had plenty of help walking out there since the grand-dog is here, plus I had the kittens underfoot. I somehow dropped the spatula in the compost box; which hits me right about at the mid rib cage area. I had the compost pan in my hand still, so while I was standing there on tip-toe on one foot leaning way over trying to reach the spatula, my eyes lit on something inside the compost boxes. Pan went flying, I shrieked loudly, dog started barking and jumping around, kittens scattered, and I tripped trying to step backwards and went down on my fanny.

It's just really amazing how much a 3 weeks in the compost pile canteloupe peel lurking under a zucchini leaf looks like a snake, all kinda tan and grey splotches and curled up like that... :rolleyes:

Prior to that little cardio workout, once I got home from daughter's house, I put flea med on the kittens; then cleared and reorganized two 2' x 4' shelves and two sets of plastic drawer storage in the big pantry, plus rotated out a small bag full of stuff we don't use to either take to daughter's house or donate. I needed to organize something - in other words: calm my inner oc (but no d) brain monster - because my brain was totally fried from helping younger grandson with 4th grade math - I thought the math they were doing before were bad... I ended up explaining to him that I didn't understand what the teacher wanted, but this is how I would do it, so we are probably both in trouble!! We started working on it last night, but he was getting upset so I sent him to shower and to go to bed; when I went upstairs 20 minutes later, he was clean and sound asleep, so hopefully he was just tired. So I got up early this morning and figured out what I thought the teacher wanted on his homework, then explained it to him. There was still one problem that none of us understood what the teacher was asking. I've decided that we are doing homework earlier tonight - and his brother won't be in the room when we do it.

The other grandmother takes over with the boys tomorrow morning; I have to make a mad dash home to get the kittens after the boys head to school so that I can take them to the vet to get chipped since daughter is going to board them for us if we get to go somewhere. Then it will be back home to get some other stuff done so that I can get in a nap before work.

I've only got one more scheduled shift to work this week, then I'm supposed to be on vacation. Hubby has a shooting match on Sunday, so we aren't going anywhere until at least Monday. Sadly, my co-workers know that, so I'm betting I get called for at least a partial shift or two as we had another nurse give notice yesterday morning (going to travel nursing); and when I left, we had two patients that required 1:1 sitters in the rooms with them. Trying to place patients anywhere right now is a nightmare - doesn't matter if it's a group home, nursing home, assisted living, substance treatment facility, developmental center, state hospital, etc... we can't get them in. And we have hospitals from over 150 miles away and out of state calling us to see if WE have beds available. We can't take from out of state because the other states mental health codes are different.

Well, I'd better go get the sheets in the washer and throw my scrubs in the dryer, put away the canners, find the cat carriers, and then find my list to see what else I'm forgetting to do here at home before I head back to town. :lol:
