So - struggling with getting enough calories and I need soft foods that require minimal chewing (cancer sucks). I think that dips (high calorie, soft) will fit the bill. I already have recipes for reuben, jalapeno popper, and BLT dip. Do any of you have others that would be good for me to try?
What foods can you eat? Meaning can you eat ground beef that's broken up really fine for tacos, or spaghetti sauce? What about hamburger gravy or sausage and gravy? Can you eat rice or mashed potatoes? This info will help us to maybe find recipes for you that's not just dips.
Also lentils cooked down until they're creamy will give you plenty of protein and calories. Grits, polenta, cream of wheat??? Rice pudding?
Also do you have a juicer? If so you can juice a myriad of veggies and get your vitamins that way as well. Blender for making smoothies?
My favorite dip for carbs and protein is hummus. Can you tolerate fresh herbs? If so what about pesto? Baba ganoush, it's an eggplant dip. And then there's Muhammara which is made from red bell peppers and walnuts, all into a nice pureed dip.
Cottage cheese can be blended with various veggies or fruits in a blender or food processor, as can ricotta cheese. Blend with either roasted or raw veggies to the consistency you like. Add various spices to up the flavors.
