Wanted Dip recipes

So - struggling with getting enough calories and I need soft foods that require minimal chewing (cancer sucks). I think that dips (high calorie, soft) will fit the bill. I already have recipes for reuben, jalapeno popper, and BLT dip. Do any of you have others that would be good for me to try?

What foods can you eat? Meaning can you eat ground beef that's broken up really fine for tacos, or spaghetti sauce? What about hamburger gravy or sausage and gravy? Can you eat rice or mashed potatoes? This info will help us to maybe find recipes for you that's not just dips.

Also lentils cooked down until they're creamy will give you plenty of protein and calories. Grits, polenta, cream of wheat??? Rice pudding?

Also do you have a juicer? If so you can juice a myriad of veggies and get your vitamins that way as well. Blender for making smoothies?

My favorite dip for carbs and protein is hummus. Can you tolerate fresh herbs? If so what about pesto? Baba ganoush, it's an eggplant dip. And then there's Muhammara which is made from red bell peppers and walnuts, all into a nice pureed dip.

Cottage cheese can be blended with various veggies or fruits in a blender or food processor, as can ricotta cheese. Blend with either roasted or raw veggies to the consistency you like. Add various spices to up the flavors.

My biggest issue is I can only open my mouth 15mm. Yeah, so that makes chewing challenging. I'm doing all the mashed potatoes with lots of butter or gravy, chopped fine meats, etc. Ice cream, pudding, creme brulee. Just kinda tired of the sweet stuff and want something that doesn't take a lot of time to prepare.

Juicing and smoothies to get your veggies! Will you eventually be able to open your mouth wider?

Soups, stews, chili’s, that you can hit with a stick blender to make mostly soft.

Have you looked at dysphagia recipes? A long time ago, a friend used them to get through a rough time period. I know a lot of special needs parents will make individual servings of stuff and then blenderize them. And has the doc not given you a prescription for supplemental drinks/foods? If not, maybe talk to them about getting something that will at least give you basic nutrients.

This sounds kind of gross, but is really good. My DH asks for this often.

2 cans of tuna, drained
8 oz cream cheese, softened
A small palmful of dried minced onion, rehydrated (maybe 2 tsp?)
couple of shakes of worcestershire sauce
salt to taste

Mix all together and chill. Great on crackers and also as a sandwich with lettuce and tomato.

I'm given Ensure every time I go to radiation - 2 bottles, but my speech therapist wants me to keep trying more textures than just liquid. Honestly, I'm getting tired. and right now, eating is a chore.

Sending hugs. There are better supplements than Ensure. But it will do. I use Premier protein shakes sometime when I just can't stop to eat. Yes, those days exit. Way too often.

I would say to dig into the dysphagia materials. And look on special needs boards. I've been very fortunate that it wasn't an issue with my son. But I know there are quite a few families that deal with it and don't like using the formulas. I know one that literally makes her son the same things that they eat and then blenderizes his servings, each item individually. From what I remember of most purees, that probably tastes worlds better than anything that can be bought. And some stuff will still have texture. Not the texture you remember, but meats don't exactly puree thoroughly at home. You can leave mashed potatoes a little chunky. Etc.

My mom used to make this with canned salmon and a few drops of liquid smoke - YUM! I will probably have to make it more runny with some extra sour cream, but that's OK.

thanks for reminding me of this one.

DEPLORABLE ME
I love this from my grandmother who made it all the time:

Cottage cheese (the dryer small curd is best)
Some sour cream, not too much or it'll get runny( probably about a large T per cup cottage cheese)
Lowrys seasoning salt
Chopped green onions, I would use two if doing a cup of cottage cheese)and chop the green as well as the white part. I couldn't believe it when I saw someone using only the white and throwing the green away!!

Mix well. Goes great with almost anything you eat dips with; I especially like with Fritos.
