Crock-Pot Breakfasts!

I work for a fantastic company, and recently I was promoted and transferred to one of our jobsites, to run the office.

Every Friday, back at the corporate suite, we were graced with permission to wear jeans. Now I'm in jeans all the time, as are the guys I take care of out here. Nothing has set Friday apart from the rest of the week for them - until recently. I started something out here. :D

On Friday mornings now, when the guys show up at the office to sign in, they are greeted with the aroma of a crock pot full of breakfast. I put something together Wednesday night, deep freeze it, then take it to the office on Thursday. I set it up on a timer to come on in the middle of the night, after the thawing has taken place (safely), so that it's ready at dawn.

The first time I did this, I brought in sausage gravy and a heap of biscuits. No special recipe - just standard stuff. I spent about 8 bucks and fed roughly 30 men. Word got back to corporate, and I was suddenly sponsored by the company to cover my ingredients.

The next week we had breakfast burritos ...

I layered frozen shredded hash browns, cooked, crumbled breakfast sausage, cheddar cheese, and a little green chile, just to make it interesting. Two complete layers, then 36 beaten eggs poured in, with some more cheese to top it off. It cooked for about 5 hours in a huge, 6 quart crock pot, and the sides were golden brown, and it was completely cooked through. 3 dozen flour tortillas completed the meal, and I was lucky to get any for myself when I got there at 8. :lol:

Last week they got French toast and fried ham:

I started off by frying up some ham, to bring out the flavor. Then I cut it into hefty chunks.

I made standard French toast stuff, eggs, milk, and I added a little bit of vanilla and cinnamon, and just a smidge of sugar. Sugar makes the stuff around the side of the pot burn, so I don't put much in. I dipped just one side of the bread and fried just one side of it. The half-fried toast was layered into the pot, with a couple of layers of ham, then the rest of the egg mixture poured on top. Froze it, then set it up to thaw and cook for about 5 hours. That, and a jug of syrup, and it disappeared before I clocked in!

This has been a great way to rotate my preps, too! ;)

They know that the breakfast will often look like lunch. This Friday I think I'll do something with potatoes and ham and cheese, with some chunks of french bread to round it out. I may do soup and bread, or maybe some sort of lasagna stuff.

I'd sure love to see some recipe ideas. Who's got the ultimate knack for crockery cooking here?

Here are a couple of recipes...

I don't know how this would do for breakfast, but here's a recipe for crockpot baked apples:

BAKED APPLES (CROCK POT)

5 to 6 med. apples, cored & peeled about 1 inch down
1/2 c. sugar
2 tbsp. raisins
1 tsp. cinnamon
2 tbsp. butter
1/2 c. water

Mix sugar, raisins and cinnamon. Stuff apples with sugar mixture and dot them with butter. Pour water into cooker. Add apples. Cook on low 7 to 8 hours. Yields 5 to 6 servings.

Or how about oatmeal?

CROCKPOT OATMEAL

2 c. milk
1/4 c. brown sugar
1 tbsp. melted butter
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. rolled oats
1 c. chopped apple
1/2 c. raisins
1/2 c. chopped walnuts

Grease the inside of a slow cooker crockpot. Put ingredients into crockpot and mix with whisk. Cover. Just before going to bed, turn the crockpot on low. The cereal will be ready for morning. Serve with milk. Serves 4.

You'll definitely have to at least quadruple the recipes! :lol:

Those sound really good, i have done oatmeal in the crock, but think i might try ur other things to :)

I've seen lots of those oatmeal recipes but have never tried it. It doesn't come out all gluey? Or is that the point?

I don't know how the oatmeal turns out, I haven't tried it yet! :lol: I'll make some up tonight and let you know in the morning. :)

Eggs Florentine with Cheese

1 Tablespoon vegetable oil
1 cup shredded old cheddar cheese
1 (9-ounce) package frozen spinach
2 slices cubed crustless white bread.
1 cup sliced fresh mushrooms
1/2 cup chopped green onions
1 ounce sliced pimiento (or red pepper)
6 eggs
1 cup half and half
1/2 cup water
salt and pepper to taste
1/2 teaspoon paprika
Grease the sides and bottom of a slow cooker with vegetable oil. Layer 1/2 cup cheese, spinach, bread, mushrooms, onions and pimiento. Mix eggs, half & half, water, and salt and pepper in a separate bowl and then pour evenly over layered mixture. Sprinkle with the remaining 1/2 cup cheese and paprika. Cook for 1-1/2 hours on medium heat in the slow cooker [approx. 1 1/2 to 2 hours on HIGH in crockpot].

Breakfast Apple Cobbler

8 medium tart apples, peeled and sliced
1 1/2 cup sugar
1 lemon (juice and rind of)
1 dash cinnamon
1 1/2 cup granola fruit and nut cereal
3/4 cup melted butter

Place apples in lightly greased crockpot. Add sugar, lemon rind, and juice. Mix well. Mix cereal with butter and add to crock.

Mix well. Cook, covered, on low, 6 to 8 hours, or overnight. Serve hot with cream or vanilla yogurt.

Breakfast Burritos

1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1/2 cup diced cooked ham
1/3 cup chopped and seeded tomatoes
1/4 cup chopped green onion
4 flour tortillas

Combine ham, tomatoes and onion on crockpot. Cover; cook on low for 2 hours. Stir in cheese. Cook for 10-15 minutes on high or until cheese is melted. Serve with tortillas. Can add scrambled eggs to mixture during last 15 minutes if desired too.

Breakfast Quesadillas

1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1/2 cup diced cooked ham
1/3 cup chopped and seeded tomatoes
1/4 cup chopped green onion
4 flour tortillas

Place ham, tomatoes and green onion in slow cooker. Cook on Low for 2 hours. Add in cheeses and cook for another 5 - 10 minutes to an hour until cheeses are completely melted. Remove and place inside flour tortillas. Roll up and garnish with more cheese and green onion if desired.

Breakfast Casserole

1 bag (32 oz.) of frozen southern style hashbrown potatoes
1 pound of bacon cut into pieces, fried and drained.
1 pound sausage, crumbled, browned and drained
1/2 cup diced onions
1 green pepper diced
3/4 pound cheddar cheese diced
1 dozen eggs
1 cup milk
1/2 teaspoon dry mustard
salt & pepper

Layer the frozen potatoes, bacon, onions, green pepper and cheese in the crockpot in two or three layers. Finish up with cheese. Beat the eggs, milk and mustard, salt & pepper together. Pour over the whole mixture. Cook on low for ten to twelve hours.

Potato-Sausage Quiche

1 pound package frozen "tater-tot"s
1 pound package "little smoky"-type sausages, cut in half
10 eggs
2 cups milk
1 teaspoon dry mustard (dijon from a jar works well as a sub)
1 teaspoon celery (or parsley or any other) flakes
1 cup shredded cheese (cheddar)

Spray crock. Line bottom with 1 layer of potatoes, then a layer of sausages. Sprinkle with cheese. Repeat layers.

Beat or whisk eggs and milk together with mustard and flakes. Pour over potatoes and sausage.

Cook on High 3 hours. Top with remaining cheese.

Then cook on Low 2 hours, or till it tests done.

Sausage & Egg Casserole

12 beaten eggs
14 slices of bread
2 1/4 cups milk
2 1/2 cups grated cheddar or monterey jack cheese
1 pound sausage, cooked and drained
1 teaspoon salt
1 teaspoon pepper
2 teaspoons mustard, optional

Grease sides of crockpot (or spray with Pam). If desired, spread mustard on one side of the bread & cut bread into large squares. Make layers in the crockpot of bread, followed by sausage, followed by cheese, ending with a cheese layer.

Beat eggs, milk, salt, and pepper together. Pour over crockpot mixture, cover and cook on low for 8-12 hours.

Western Omelet Casserole

1 bag (32 oz) frozen hash brown potatoes

1 diced bell pepper
1 1/2 cup shredded cheddar or Monterey jack cheese

1 cup milk

Place a layer of frozen potatoes on the bottom of slow cooker, followed by a layer of bacon, then onions, green pepper, and cheese. Repeat the layering process 2 or 3 more times, ending with a layer of cheese. Beat eggs, milk, salt, & papper together. Pour over crockpot mixture, cover and cook on low for 10-12 hours.

Oatmeal report...

O.K., I made the oatmeal last night. It's GOOD! All the kids but one liked it, and I figure 4 out of 5 isn't bad. ;) Even Dh liked it. And it smells *wonderful!*

It didn't turn out as "gluey" as I thought it would. I think if it had cooked for a shorter time it might have been even less so. The only problem I had was that the outsides burned to the crockpot a bit (fortunately, it didn't make the rest of it taste burned!). I think even on low my new crockpot is too hot. Maybe I'll try it on just the "warm" setting and see what happens.

I did triple the recipe (for 7 people) and it probably wasn't quite enough, if the other 2 in our family were eating it I would have to quadruple it for sure.

So there you have it! We'll definitely make it again. :)

How long did you cook it?

I know what you mean about low seeming high. I have a 6 quart cooker - it's not a Rival, it's a West Bend, I think. Even the "keep warm" setting will burn things after a while. I've found that high sugar content makes things burn even faster.

You're welcome. :) It cooked for about 9 hours on low, I think 6 or 7 might have been better. I'll have to keep experimenting!

I have always loved my crock-pot for cooking all day. Nothing like coming home from work, and a hot meal is waiting in the crock-pot - not to mention how good it smells.

I never thought of using it for breakfast! I just printed out all those crock-pot breakfast recipes. Thanks!

mmmmmmmmmmm! I think I'll set up my mini-crock with some oatmeal before I go to bed tonight. Think I'll use dried cranberries and pecans instead of raisens and walnuts, though.
