Recipe Creamy Blueberry Tart

Made this tart for July 4th - topped with strawberries/raspberries/blueberries.

Real easy to 'whip up'. Delicious.

In a saucepan, whisk 2/3 cup heavy cream, 1/4 cup sugar, 1 tsp vanilla extract, and 1 tsp unflavored gelatin.* Cook over medium, stirring, for 3 minutes.* (I wait until it's uniformly 'hot' at medium heat and then time for 3 minutes.)

Beat 1 8oz pkg room temp cream cheese until smooth.* Blend in one 5.3 oz cup of vanilla yogurt.**Beat until smooth.

Add the saucepan mixture to the cream cheese/yogurt mixture.* Beat until smooth.

Pour into a 9 inch graham cracker crust.* Top with 1 cup blueberries.* Chill for two hours until set.

I would think one could use any flavor of yogurt - like peach and top with fresh peaches; or strawberry and top with fresh strawberries. Or mix the fruit/flavors.

One could also use low sugar yogurt like Skyr Icelandic (11 grams of sugar).
