Food Ceviche Omelet?

I'm about to do this newfound creation in my crazy mind. I have a batch of fresh shrimp ceviche with tomatoes, cilantro, avocado, and red onions. I will scramble 3 large eggs and pour on Medium High with real butter. Let cook for a couple minutes and put the ceviche over the eggs. Reduce heat to low medium. Slow cook for about 10-15 minutes. And then with a fancy hand, flip the eggs over half way to create the omelet. It takes a whole lotta shakin' goin' on...
