I told OC we could make this using ground pork instead of pork chops, he agreed. We both love cabbage and bok choy.

  • 1 lb baby bok choy (the larger bok choy works too, more on this later)
  • 4 oz pork chop
  • Soup Base
  • 14 oz chicken broth
  • 5 cups water (soup base)
  • ginger (optional - just a few slices)
  • 1 tsp oil
  • 1 tsp salt
  • 1 tsp chicken bouillon (optional)
  • Pork Marinade
  • 1 tsp cornstarch (pork marinade)
  • 1 tsp oyster sauce (pork marinade)
  • 1 tbsp water (pork marinade)
On Bok Choy
My parents generally prefer baby bok choy, but this also works with the larger variety and Shanghai bok choy.

I make a Bok choy soup my son loved so much he cooks it too now. So easy and so basic but tasty I use garlic, ginger and shallots (or any onion I like shallots though) my secret “sauce” is this vegan fish sauce I get from Amazon called Yondu. It’s expensive but it’s soooooooooooo good. A little goes a long long way

You will like it if you like cabbage, nappa cabbage and other greens. I expect it likes cool temps like cabbage but I have not grown it.

It's a nice mild flavor. Less peppery than head cabbage.

I did, but there is no where near time for them to do much. Next year for sure. But I have tons and tons of absolutely beautiful greens for now and later…collards, mustard, cabbages (head and leaf), chard, kales….Live and learn …for sure next year, apparently greens can’t fail here lol.

You could sub out any of those other greens, especially the young tender leaves, for the bok choy! If you do let us know how it works out.

Maangchi - great Korean food recipes

Souped Up Recipes - Asian, she breaks things down really well for when you need to make substitutions. I finally learned how to make dumplings because of this gal.
