I have read on the food inflation thread that the eggs are alot more expensive now.

But she did give me some ideas on relatively Keto dishes I could prepare for myself, since I am on the Keto diet.

The other thing I noticed is how little she seems to be feeding her family of four.

Alot of her meals, it seemed to me, were too small of servings for most adults.

For example, she is expecting one 14.5 ounce can of green beans to be a sufficient side dish for four people?

Well, maybe, if three of the four are little children.

But I am a grown man, and I know that one fourth of one of those little cans of green beans would never make it for me…


And I am NOT a fat guy. I used to run marathons until my wife got so sick. I am trying to watch my weight since I am not getting as much exercise as I used to, and began to put on a few pounds, but I am not an over eater or something. Most guys eat more than I do.

This is something that concerns me as I go back to the 21 day fix meal plan, it’s low carb, not keto... autumn is 100% Italian... however, it it’s egg centric, especially for snacks. OC told me not to worry about costs for eggs, however, I still do.

Yes.
1 c. shredded mozzarella
1/4 tsp Xanthum gum (other recipes call for gelatin)
1 egg yolk.

sprinkle xanthum gum over cheese and mix-microwave cheese to melt.
Mix in egg yolk and roll out.
slice into strips and refridgerate 30 min or 8 hours, depending on recipe.
Boil just 1 minute. to cook.
I'm gonna try it with farm cheese, similar to mozzarella. Thanks!!!

I dunno. I need some carbs, like oatmeal for breakfast a few days a week for both fiber and my budget. I'd eat bacon and eggs a lot more, but both are getting pricey.

The keto pizza in the video above looks interesting.

I get gas and something akin to acid reflux if I don't get enough for breakfast, which is why I try to at least get one slice of protein bread (toasted) into me if I'm drinking just a smoothie.

Lunch is the better meal for me to skip, especially if I've had bacon and eggs for breakfast. That'll hold me.

I have experimented with two meals a day, but it's a non-starter when I'm working two jobs: I need more sustainable energy so I don't crash about 4 pm and never recover. I have given up pop and energy drinks, which cause additional problems.

My hope is to get back to one decent-paying job, but I'm not holding my breath.

In the meantime, it's "salad time," and I eat a lot more salad-type dishes with pork, chicken, or beef strips on the top. It's budget and weight-friendly and filling if I add some navy or garbanzo beans to it.

You might see if any of your friends will sell you eggs for cheap. I am blessed that currently I have a friend that brings me all of her excess eggs that her family doesn't eat. (And they eat a lot.) She keeps being afraid that I won't want them. She really doesn't understand that I am perfectly happy eating the same thing for breakfast repeatedly. It's a me thing. I need the carbs gone and I can prepare eggs in all sorts of ways to keep the tongue happy. Although generally, it is pretty please with eggs any way I make them. Right now it's as over easy omelets with onions and peppers and cheese. Just enough of each to bring some different flavors. a 12 oz frozen package of onions and peppers can normally last me two weeks or so.

I am almost 3 weeks into my keto diet..... I did it years ago with success....now I've got to again. Have you considered hard boiled eggs for a quick/easy meal filler. Gets the fat burning of a morning and don't take you out of ketosis..... (cheap too...relatively speaking).

Regarding the Green Beans - 14.5 oz can = 4 servings.
Yes. It is weird. I get the small 8 oz cans because sweetie does not eat green anything.

The 8 oz can says Serving size - 1 Can.
However on the "Nutrition Facts" label, it shows facts for "1/2 cup" in one column and "per container" in the next.
Per container was double 1/2 cup. The can is 1 cup.

The 14.5 oz can says serving size "1/2 cup" and 3.5 servings per container.
Del Monte says the serving size for drained Green Beans is 1/2 cup however, the amount per serving is 1/3 cup.

They aren't making this easy. Half that small can of beans is NOT satisfactory.
Fortunately, 1 cup of drained green beans is only 8 grams - so screw it.

I am almost 3 weeks into my keto diet..... I did it years ago with success....now I've got to again. Have you considered hard boiled eggs for a quick/easy meal filler. Gets the fat burning of a morning and don't take you out of ketosis..... (cheap too...relatively speaking).
Four weeks into it. I bought a KetoMojo. Its one of the pin prick glucose and ketone monitors. Its really been helpful.
Only kicked myself out of ketosis once.
Lost 20# in 4 weeks.

My family eats lots of eggs and we are freeze drying them as well. Last time my mom bought the 60 egg tray it was $10.33. She just bought another tray of 60 and they are now $15.28. That’s a doggone big jump.
