CHAT Quilt Squares: What's for dinner 1/23/22

This may not be my place, but seems for the last several weeks this hasn't been posted. I so much enjoyed seeing what everyone is cooking. So I'll start. Cold and snowing with 6 inches of snow here in North Central Ohio. Wanted comfort food. Having Shepherd's pie, rolls and a salad of grape tomatoes with fresh mozzarella and a vinegar dressing. What are all you serving this evening?

I can't see that Seabird has been online since the 9th. Girly - we've got way too much going on and I get that. But give us a wave to let us know you're all right.

Today in Moldy Land, it's beautiful outside. DH and I did quite a bit of work outside yesterday, then he got called out late to work. Today has been a very lazy day. Exciting though because my hens I bought as chicks in September are finally starting to lay (and I know it's a little early, even!)

Not sure what dinner will be: I'm leaning toward fried potatoes with some green chili on top (for me), over easy eggs and cheese. And maybe bacon.

We've been real quiet this weekend other than a few errands of grocery pickups. Today we ran to the Kroger for pick-up and then grabbed a couple of burgers and tater tots as a late lunch. So here in a just a few minutes we will have a biscuit, eggs and maybe some gravy.

Dh went to his “source” and brought in a dump truck load of wood. I’ve spent the day knitting after not sleeping well last night. I’ve been heavily burdened by all the loss this past week from covid both-here and in real life.
Found some rib eyes yesterday for 5.99 a lb. got a few to put back and had planned to throw some on the grill for tonight but it is too cold outside. We will have leftover baked Mac & cheese and cold roast beef sandwiches using up the last of the roast I made during the week.

Blondies was the first thing my Mama taught me to cook, but girlfriend, mine never looked like that. Delectable!

We had Black Bean Chicken Chili with Corn Chips. It's cool here and we've been working all day. I was out in the Craft Cottage and left the door open.

Calico cat just sauntered in the open door and checked it out. This is a feral cat that has shied away from buildings for three years. Don't know what changed, but maybe we can make an indoor kitty of her, at least when it's cold?

DH saw a nice Axis buck at first light and there were two nice Whitetail bucks come in to the Chicken scratch we leave out for the wild birds. All are safe here. Build the herd, if and when we need them, they'll be there.

Get everything you can battened down and all chores and preps done. Sleep when you're dead.
It's been lovely! Thank you all for letting me share your friendship over the years. If we get a few more days, great, but I wanted to say I learned a lot. I love you all.

Cold day, high around 2-3 degrees, but at least no serious wind like yesterday, so outside work was halfway pleasant. Have finally conceded that it's wool mitts and choppers from now on through this cold spell. No more insulated leather gloves. Dang...it burns when those fingers thaw out..did a good number on 'em yesterday. :)

Made a meatloaf, with buttercup squash and pickled red cabbage for early supper. Done and time to hang it up.

I have been distracted... Two weeks ago on the last thread I started, I said I was having surgery on the 14th. Well, I did, and it was major surgery. I wasn't going to share any real info, but now I think it's okay! In December, I was diagnosed with Endometrial Cancer, stage 3. So, Last week I had a full hysterectomy. This week the pathology came back and the cancer was completely contained, which means they were able to get it all and I am currently cancer free! As of right now, no chemo, no radiation, etc. I am so blessed.

Of course, having to sit out for a full six weeks is not something I want to do... Friday, one week after the surgery, I was feeling good, and ready to do something, so... I went shopping. Suffice it to say, I came home and crashed. I set my self back a bit, but I learned my lesson. So now I am being a good girl. :lol:

I wasn't going to share any real info, but now I think it's okay! In December, I was diagnosed with Endometrial Cancer, stage 3. So, Last week I had a full hysterectomy. This week the pathology came back and the cancer was completely contained, which means they were able to get it all and I am currently cancer free! As of right now, no chemo, no radiation, etc. I am so blessed.

Of course, having to sit out for a full six weeks is not something I want to do... Friday, one week after the surgery, I was feeling good, and ready to do something, so... I went shopping. Suffice it to say, I came home and crashed. I set my self back a bit, but I learned my lesson. So now I am being a good girl. :lol:


Well, praise God you're ok! You continue to be a good girl, get plenty of rest, and take care of yourself.

I’m just starting to cook again after being sick for a few weeks and then getting my strength back.

Today I made a big pot of goulash topped with Pecorino Romano cheese and garlic bread to go with. It hit the spot on this very cool day. Oldest DD came and ate with DH and I, then DH made a delivery to drop off goulash at youngest DD’s house for her and DSIL. The parents aren’t sick but all three grands have tested positive and are quarantined for another day or so.

Seabird~ So glad they got the cancer. Now, take it easy and don’t overdo.

Wow, so many of us going thru such harsh times, May God‘s grace and love lift all of us :)

Today is yet another above-freezing, windy, blustery day…bringing down yet more branches and tree trash. Sigh - I’m going to have a big mess to clean up come spring. But it freezes over every night so I can’t deal with it yet…and I know we have a lot more snow before then.

But y’all are welcome to bring your skates to my great big driveway/ice rink!!

Dinner….Smoked Copper River salmon from a friend, and the prettiest tomatoes I could find. Dressed with a touch of lemon and salt.

Y’all take care of yourselves this week!

On TB every waking moment
Had noodles left over from the chicken alfredo a couple days ago. DW had brought home some shitake mushroom soup last week, so I heated up a can, dumped in the leftover green beans and some canned chicken. Finished off with the noodles and had a good one-pot leftover easy meal.

Lazy cook day ... and no more leftovers :D

Today was a good day. Started out doing some work for a friend that came out VERY well. After that, drove to southern VA where I'm at tonight.
The Wife is home being a batchelorette for a day (which means microwave meals and door dash, Downton Abbey and Little House on the Prairie binge watching and her sidekick TBear enjoying the festivities). TBear got his first bubble bath last night incidentally-wife was taking a bubble bath and he jumped in with her! He actually liked it, and this morning I had him on the pillow next to me, smelling of lavender and kiwi. Guess it was the wife's conditioner; his hair looked great :)

Dinner tonight was spaghetti and a salad, washed down with red bull. Everyone have a great week!

And Seabird-prayers sent for you. Glad you're ok!

I didn’t feel much like cooking tonight so tossed a steak in the air fryer with a side of Knorr rice- easy peasy. DD went to Utah for a friends baby shower. She’ll be back tomorrow the Tuesday we’ll go to LA to visit her sister.

Wednesday is my bday so we’re going to do lunch downtown at my favorite bar. I say bar but it's more like a cute little place that happens to serve drinks. Literally a small hole in the wall. I figure a Wednesday at lunch time it should not be too crowded. They have the best mini sandwiches and charcuterie.

The rest of the week she’s going to help me go through some stuff in the garage and decide toss or donate.

Aperitif is an Aperol Spritz (Aperol, Prosecco and club soda on ice with a slice of orange). Dinner will be pan fried pork chops with apricot & mushroom stuffing, all smothered in pork gravy.

I'm glad your ok Seabird. This thread you started quite sometime back now is one of my favorites on the board and always look forward to see what everyone is creating for dinner on Sundays.

Found some wood to chop and got the axe out for some exercise this afternoon. On to the pub to watch football playoff games. Tuna noodle casserole and added a can of peas this time and sautéed mushrooms. It's resting now, but I'll know soon enough.

Beautiful day here in Northern California. The sun was shining and it was easily in the 60s.

I put together a new BBQ and had my Dad and a good family friend over for steaks and fried potatoes. Dad brought a bottle of wine and we ate by the creek in the sunshine. It was a good day.

Hot pot of fresh Chicken soup. It's cold up here in the Northeast. Made homemade brownies as well.
Probably will make my Orange and Cranberry muffins during the week. Fresh bread using my bread maker. And by Friday we will pizza. We always have a fresh salad with dinner.
